Mushrooms are in season - with fall weather arriving, mushrooms can be easily made into delicious, nutritious meals for heart, immune and antioxidant support.
Shiitake mushrooms a symbol of longevity in Asia, and have been used medicinally by the Chinese for more than 6,000 years. While China produces over 80% of all shiitake mushrooms available, Ontario producers offer up organic, and some of the freshest, delicious medicinal mushrooms -locally! At a recent trip to an Organic Mushroom farm in Simcoe County I found beaming customers with cases of mushrooms- eager to let me know these were the finest local mushrooms. Intrigued, I simply had to stop in the small shop and after a lengthy chat with the grower himself - walked out loaded with oyster, shiitake and portabellini. I was in for a treat - the most delicious and medicinal soup - perfect for a cool fall day which I just had to share (recipe below).
